Broccoli and Feta Pesto Pasta

My parents always encouraged me to try different foods.  If I didn’t like it, I didn’t have to eat it, but they were all for food experimentation.  That is one of the things that I am grateful for. Because of this, I have eclectic food tastes.  Pesto, and feta cheese, have been among my favorites, ever since I can remember.

This pesto is made from broccoli and feta cheese, rather than the traditional basil and Parmesan.  Broccoli and feta pesto pasta is a great way to sneak some veggies into your meals, too.

Quick and Painless Reuben Sandwich Recipe

What do you do with leftover corned beef?  You make Reuben sandwiches!

Corned beef is one of my favorite traditions of St Patrick’s Day. Cooking that all day long – or worse, waiting for it to be finished cooking when you’re at someone else’s house! It’s an arduous process, maybe that’s why we only do it once a year. If I’m really being honest, the veggies are my favorite part of the meal. But once they’re gone, what do you do with the left over corned beef? If you’re part of our family, we make Reuben sandwiches. Mmm…it’s a great change from the regular corned beef, and the sandwiches feel really special. They’re super quick to make, though. We’ll keep that our little secret.  If you don’t have corned beef that you’ve cooked, you can get corned beef from the deli counter.

Slow cooker chili is an easy dish to make to feed a crowd.  Try it for your next gathering.

Chili is one of my favorite cold weather foods. Ahhh…who am I trying to kid? Chili is really one of my favorite foods. Its easy to change up, depending on the day and what your mood is. Looking for something spicy? Throw a couple peppers into your pot of chili. Want something soupier? Increase the water or stock.

Slow Cooker Chili is practically no fail, too. Simply brown your meat (or mushrooms) and onions, and then throw all the ingredients in.  Let it simmer all day, and voila! Slow Cooker Chili that will have everyone begging for more.  Slow cooker sauces make it even easier!
