Quick and Painless Reuben Sandwich Recipe

quick-and-easy-reuben-sandwich

What do you do with leftover corned beef?  You make Reuben sandwiches!

quick-and-easy-reuben-sandwich

Corned beef is one of my favorite traditions of St Patrick’s Day. Cooking that all day long – or worse, waiting for it to be finished cooking when you’re at someone else’s house! It’s an arduous process, maybe that’s why we only do it once a year. If I’m really being honest, the veggies are my favorite part of the meal. But once they’re gone, what do you do with the left over corned beef? If you’re part of our family, we make Reuben sandwiches. Mmm…it’s a great change from the regular corned beef, and the sandwiches feel really special. They’re super quick to make, though. We’ll keep that our little secret.  If you don’t have corned beef that you’ve cooked, you can get corned beef from the deli counter.

Are you ready to make a Reuben sandwich with your leftover corned beef?

One of the things I love is a really good treat. Normally, I like to go for baked goods. Particularly brownies, as they’re my weakness, although I really do like almost all types of bar cookies. There’s just something about them that feels indulgent.

And I am a sucker for something that’s layered, like these Caramel Turtle Brownies. I mean, really – what’s not to like? Rich chocolate, soft caramel, and pecans? Oh yes please! Make a batch of these Caramel Turtle Brownies for your next get together, and people will love you for it.

I am a sucker for appetizers. I can eat just appetizers and no actual meal, and be super happy. When I was a kid, it seems that clam dip was everywhere, and it was my favorite type of dip. I don’t know if it was just the 1980s, or when the classic clam dip fell out of favor.

Fast forward, and I’ve decided to do my part to bring it back. This version of classic clam dip is different though. This is a lighter and fluffier version that lower in fat and calories, but still high in flavor. That’s something we all want.

I may have mentioned a time or two that I am a sucker for a gift basket. I love to dig through there and see what treasures await me. And when you find that one thing that’s fallen beneath the excelsior and basket filler, it’s like you’ve discovered a gold nugget!

The thing about gift baskets, though, is they can be kind of overwhelming when trying to decide on one. Do I pick the cheese lovers or the sausage lovers? Maybe do one with some mustards or spreads…What the heck is the difference between these two identical looking baskets?!?!

Trust me – we’ve all been there. Here are a few gift baskets that everyone would love to receive. All baskets shown are from Hickory Farms.

These days, we’re all concerned about being greener. We recycle. We buy cars that are more fuel efficient. We’re trying to go paperless. Our paper, when we use it, is mandated to be at least 30% post-consumer waste, i.e. recycled. Yet there’s a scourge that is in most of our homes, and the majority of us never even think about – our single serve coffee machines.

What the heck are we supposed to do with all of those little plastic cups? Throw them away? And do you have any idea how long they’ll take to biodegrade? Like, forever. Forever and a day, maybe. There’s a better choice for our single serve coffee cravings – Cameron’s Coffee.
